Demetra, “Mimi “ (Bacas) Gianacakes, (94), of Palm Harbor, FL, passed away on May 7, 2021 at her home in Palm Harbor, FL surrounded by her loving family. Mimi was born in Washington, DC to William and Elaine Bacas on November 9, 1926. She attended Calvin Coolidge high school and graduated in 1943 then went on to earn a BA from Radcliffe College, class of 1947. Mimi met her beloved husband, Peter J. Gianacakes in 1948 and they got married in Washington DC. As the wife of a successful executive, Mimi and her family traveled the world and lived throughout the United States with extended stays in Louisville KY, Hightstown NJ, Murray Hill, NJ, Dover, MA, and Bernardsville, NJ before retiring to Palm Harbor, FL. Mimi was happiest when she was with Peter, their children, grandchildren, and their extended family and lifelong friends. Mimi was active in church and community affairs and took pleasure in volunteering. She was active at Holy Trinity Greek Orthodox Church (Westfield), St. Nicholas Greek Orthodox Church (Tarpon Springs), Tarpon Springs Library, and the Morris Museum. Mimi enjoyed golfing with the “18 holers” at Morris County Golf Club and Innisbrook Golf Resort. Mimi was an extraordinary hostess and cook - and delighted in entertaining friends and family on holidays and many special occasions throughout the years. Mimi also enjoyed reading, travel and historical exploration, painting, music, theatre, opera, flower arranging, and caring for her pets. In retirement, Mimi finally was able to dedicate more time to her passion for writing and authored two books, “My Whites Clouds” and “The Race for Medusa” (under pen name DG Bacas ). Mimi is survived by her children, James P. Gianacakes (wife, Nancy ), Clearwater, FL, daughter, Anne Burke (husband, Derek ) of Summit, NJ, and her 5 grandchildren, Jessica ( husband, Chris ) Winckel of TX, Casey Gianacakes of FL, Thomas Burke of HI, Peter A. Gianacakes of FL and Stephen Burke, NJ. Also her sister, Athena Davies of GA. She is preceded in death by her beloved husband, Peter James Gianacakes 2008, her parents, Willam and Elaine (Louvis) Bacas., and brothers Solon (Toby) W. Bacas. and Byron Bacas. Prayer service and visitation will be held at Moss Feaster Funeral Home, Dunedin FL on Friday May 14, 2021 from 5-7 pm (prayer service is at 6:30).
